Mango Kalakhand




I have sent this entry to Mrs. south Indies- sweet contest- july2010

Ingredients:-

Milk- 6 cups
Sugar- 1 cup
Mango pulp- 2 cups
Vinegar or lemon juice- 1 tbspn
Almonds and cashew nuts- coarsely crushed- 1/4 cup

Recipe:-

Bring milk to boil. Keep it on a medium flame. When it is boiling, add vinegar or lemon juice in to it.

Once milk curdles, switch of the flame. Remove all excess water and keep it a side. Same processes as u do for paneer. Remember, this has to be softer than paneer. Kalakhand would be nice if you have softer cheese.( you can use ricotta cheese instead of making from scratch)

In a pan add sugar, mango pulp mix well and add curdled milk mix well again. Keep mixing for 10 mins then add the crushed cashew nuts and almonds. Cook well at least on a medium flame for 15 mins. The whole mixture will become thick.

Take a pan, grease with ghee. Pour the mixture in to it. Leave it for 4 hrs and cut it in to small pieces and garnish it with almonds or pistachios.
