Gongura pacchadi- One of the classic authentic food
Authentic Guntur Gongura pacchadi from sorrel leaves ..
Recipe :
Sorrel leaves - 2 bunches
Onion- 1 small
Garlic-6 flakes
Red chillies -7-8
Dhaniya-1 tspn
Pepper-4-5
Sesame seeds-1/2 tspn
Add oil in to pan and add sorrel leaves and fry until it becomes soft .
Take out leaves and keep it aside.
In the same pan, add red chillies, Dhanya. Pepper and sesame seeds , fry it until it changes color .
In mortar and pestle . Add the fried above items and mix well. Add chopped half onion and make a coarse paste .
Keep it aside that paste.
Add fried leaves in M&P and coarsest grind .
Remove the paste .
Add some more oil on to pan .Add garlic pieces and curry leaves and the grounded paste. Fry for some more time. Finally add the seasoning with uradh all mustard seeds jeera and hing .
