Peri Peri Tawa Anda/ Shakshouka

Poached eggs in spicy onion and tomato along with healthy squash and peri peri masala !




Ingredients :

For peri peri masala :
Kashmiri red chili powder
Red chili powder
Pepper
Salt 
Red chili flakes
Cinnamon powder
Jeera powder 
Garlic powder
Ginger powder 
Bread crumbs 

For Tawa Anda :
Eggs -6
Onion-1 large 
Tomatoes-2
Belleppper-1
Zucchini-1
Corn- 3/4 cup
Methi leaves -1 bunch 
Oil-2 tbspn
Butter- 1 small cube 
Ginger garlic paste-1 tspn

Method :
  • Add oil and butter in to pan. 
  • Add onion and and fry for 2-3 mins. Add methi and fry until it becomes soft.Add salt and ginger garlic paste.
  • Add other veggies one by one and keep trying for 3-4 mins until all becomes little soft.
  • Add peri peri masala. Mix and spread the mixture evenly to the pan
  • Add water 1/2 cup.
  • Break eggs and drop on the mixture. Cover the lid and cook on low flame for 10 mins.
  • Sprinkle coriander leaves and cut it in pizza slicer and enjoy !
